Mini chocolate chips cookies are a crowd pleaser!  These are perfect for taking to a backyard BBQ or picnic. We took these to a Girl Scouts picnic and they disappeared fast!  I mean who doesn’t love cookies!  And isn’t everything cuter when it’s small?

Mini Chocolate Chip Cookies

Ingredients
  1. 2 1/4 cup flour
  2. 1 tsp salt
  3. 1 tsp baking soda
  4. 3/4 cup brown sugar, packed
  5. 3/4 cup granulated sugar
  6. 1 cup butter, softened
  7. 1 tsp vanilla extract
  8. 2 eggs
  9. 12 oz mini chocolate chips
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine flour, salt and baking soda in a medium bowl and set aside.
  3. In a large mixer bowl combine sugars, butter and vanilla and mix until creamy.
  4. Add eggs and mix.
  5. Add the dry ingredients and mix well.
  6. Stir in the chocolate chips.
  7. Line your baking sheets with a Silpat or parchment paper. Drop spoonfuls (tablespoon for medium size cookies, teaspoon for tiny cookies) of the dough onto the cookie sheet and bake for 7-9 minutes.
  8. Allow to cool on the baking sheet for 2 minutes before moving to a cooling rack.

Seventh Birthday Science Party

Happy Monday!  I hope you had a wonderful Mother’s Day!  We had a great weekend!  We had a lot of birthday excitement as today is Cupcake’s seventh birthday!!  We celebrated on Saturday with a party at a local hands-on museum.  This was our first adventure with having a birthday party somewhere other than our house and aside from a bunch of cookies getting broken on the way there it was a blast!

When the party guests arrived they each had a science name badge waiting for them.  I used the free printables from PBS for the party!  They were exactly what I was looking for and I didn’t have to do too much work!  (I did edit the name badges to remove the picture spot)

The photobooth props were a big hit!   The birthday girl really liked the glasses and mustaches.  Doesn’t she look adorable in her science dress?  I just love how this Sutton Dress (by Made for Mermaids) turned out!  I found this science fabric at Joann’s and it was perfect for our theme!!

Pumpkin also got a new dress for the occasion.  Luckily I had half a yard of fabric left over after making Cupcake’s dress!  She’s rocking the new Sommer Dress from Made for Mermaids.  

I had activity sheets and crayons for the kids to work on while we waited for everyone to arrive.  Once the gang was all there we headed out to explore the museum.  The checked out the python (it was feeding day!) and possum.  Moved on to the music room, then hit up the water table before heading to the Do Lab to get hands-on with science (such as “cleaning up and oil spill”).

And mixing colors of water to see how the colors change.

Then there was a lot of climbing and sliding before heading over to “make pizza” and see the animals in the zoo.  The two-toed sloth was awake and on the move!  And the otters were super active as it was getting close to feeding time.  The kids also got up close and pet a snake!  Then we headed back to the party room and washed hands in preparation for cake…..

….and cookies.

It was a great party!  Everyone had a great time!  Cupcake was so happy to have friends and family there to celebrate her big day!  And today we’ll celebrate with pancakes for breakfast and treats for her soccer team after school.

Happy 7th birthday, Cupcake!!!  We love you!!!

Fish Sandwich with Slaw

Happy Monday!  I hope you had a great weekend!  I took the girls roller skating, which is their new favorite thing to do.  They both own skates, now, so we’re getting a good bit of use out of them while they still fit!  We also ate these delicious fish sandwiches with slaw!  Pumpkin isn’t a big fan of most meat, but when I make fish for dinner she gobbles it right up.  This fish sandwich was no exception!

Fish Sandwich with slaw #recipeI had some catfish I wanted to use and we had just had Crispy Baked Catfish the week before, so I wanted to try something different.  I’m a big fan of slaw so when I stumbled on this recipe I was intrigued!  I made a few changes to the recipe and it was a hit!

Fish Sandwich with Slaw

Slaw
  1. 16 oz bag coleslaw veggies
  2. 1/4 pickled pepperocini peppers, chopped
  3. 1/4 cup red onion, diced
  4. 1/3 cup mayonnaise
  5. 1/2 lemon, juiced
  6. 1 tbsp red wine vinegar
  7. 1 tsp Dijon mustard
  8. 1 tsp salt
  9. 1 tbsp garlic powder
  10. 1/2 tsp onion powder
  11. 1/2 tsp lemon pepper
Fish
  1. 6 catfish fillets (4 oz each)
  2. 2 tbsp hot sauce (I like Frank's Red Hot)
  3. 1 cup cornmeal
  4. 1 cup panko
  5. 1 tbsp garlic powder
  6. 1 tbsp onion powder
  7. 1 tsp black pepper
  8. 1/2 tsp cayenne pepper
  9. 1 cup oil for frying
  10. 6 hoagie buns
Sauce
  1. 8 oz cream cheese, softened
  2. 1/2 cup Dijon mustard
  3. 1/2 cup mayonnaise
  4. 3 tbsp garlic powder
  5. 3 tbsp onion powder
  6. 1 tbsp lemon juice
  7. 1/2 tsp cayenne pepper
  8. salt and pepper
Instructions
  1. 1. Toss all the slaw ingredients together in a large bowl and mix well. Refrigerate until ready to use.
  2. 2. Combine all sauce ingredients in a medium bowl and refrigerate until ready to use.
  3. 3. Place the fish in a bowl with the hot sauce and toss to coat.
  4. 4. In a separate bowl combine the cornmeal, panko, garlic powder, onion powder, black pepper and cayenne pepper. Remove catfish fillets from the hot sauce one at a time and coat with the breading mixture.
  5. 5. Heat oil in a large skillet over medium high heat and fry the fillets until cooked through, 3-4 minutes on each side. Remove to a paper towel lined plate.
  6. 6. Assemble each sandwich by putting one fillet on a hoagie and top with slaw and sauce.

Cupcake’s Rainbow Craft Party

Yesterday Cupcake turned 6!  I don’t know how that happened.  She has grown so fast!  Two inches in the last year!  She is such a funny girl.  She’s so smart.  I love listening to her read.  She’s getting so good at it!!  And she’s a little mathematician.  She’s very energetic and can often be found bouncing off the walls or the couch.  She has a big heart and loves everybody.  She especially loves her little sister, which melts my heart.  And she’s happy!  She typically wakes up in a very good mood, my little sunshine.  A bright girl like her needed a bright birthday party!  We settled on a rainbow craft party because she loves crafting.  And the party was a hit!

DSC_9459I sewed her up a Brooklyn Dress with circle skirt modification and Bonny Leggings to coordinate in the brightest, rainbowest fabric I could find.  And I love how it turned out!!

Rainbow Craft PartyRainbow colors of crepe paper made great, easy and cheap decorations!  And I found great rainbow plates and cake banner at Hobby Lobby.  With traveling last weekend I didn’t have a chance to make cookies, like I love to do.  So I feel the dessert table was a little sad.  But it left room for the favors.

Rainbow Craft PartyFor favors I found these great paint buckets and I added a notepad with “color swatch” covers, a rainbow twist lollipop, a stackable crayon and rainbow stickers.  I used my Silhouette to cut a letter for each guest.  The kids loved them!

Rainbow Craft PartyBut back to the cake.  I went with an easy but messy method for decorating.  I just frosted it with buttercream and pressed sprinkles to the side.  I read a tutorial that told me to roll the cake in the sprinkles, but I was terrified to try to pick this thing up and roll it!  I put the turntable on a baking sheet to help catch the sprinkles that didn’t make it onto the cake.  But quite a few bounced around the kitchen……

Rainbow Craft PartyOh, and Pumpkin got into the rainbow fun, too.  She got a pair of Bonny Leggings with circle skirt and a Flutterby top to match.  She was disappointed it wasn’t purple, so I had to bribe her to wear it.  #threenager

Rainbow Craft PartyI served up BBQ pulled pork and mac and cheese.  Then made a rainbow platter of fruit and a rainbow platter of veggies.  And for some extra crunch I added some Terra chips. 

Rainbow Craft PartyIt was a cold, windy day, so my plan for an outdoor craft got moved to the garage, again.  Each kid got an apron with their name on it to wear while the painted a masterpiece.

Rainbow Craft PartyWe let them pick what colors they wanted and let them have free reign of design.  It was great to see all the different ideas and creations!

I also cut out paint splatters from colored cardstock and taped them in random places around the house.  But I don’t think I got a picture of them.  But back to the cake……

Rainbow Craft PartyCupcake kept changing her mind about what kind of cake she wanted.  This girl loves chocolate, but we finally settled on…..

Rainbow Craft Partya rainbow cake!  I love how it turned out!  It was hard to cut, though.  6 layers is tricky.  I think the best way to cut is start with the top 3 layers first.  By cutting through all 6 layers (and then giving each person 3 either the top 3 or bottom 3) the cake got very wobbly and by the time I was done serving it tipped over.

Rainbow Craft PartyCupcake was showered with amazing gifts from very thoughtful and amazing friends and family.  The kids sat and watched for all of 5 seconds and then they couldn’t resist jumping up to get a closer look!

Recipe: S’mores Snack Mix

Every Friday night I make a pizza, we pile up on the couch and watch a movie together as a family. Friday pizza movie night is our tradition.  Sometimes we like to have a little snack during our movie as well.  Popcorn is a favorite, but last week I whipped up this S’mores Snack Mix and the girls went crazy for it!

DSC_9280-EditThis is such a quick and yummy snack! You only need 3 ingredients, there’s no cooking involved and it’s s’mores!  I love s’mores!  This is also a great recipe for getting kids involved in the kitchen.  They can measure, stir and drizzle.  Well, maybe do the drizzling yourself.  😉

The hardest part of making this delicious snack is waiting for the chocolate to firm up so you can dig in!  But once you dig in, yum!  It was a big hit with Cupcake who dug right in.  Pumpkin is a tricky one and she picked out marshmallows.

Ingredients
  1. 4 cups Golden Grahams cereal
  2. 2 cups miniature marshmallows
  3. 1 cup chocolate chips
Instructions
  1. Combine cereal and marshmallows in a large bowl.
  2. Spread evenly on a wax paper lined baking sheet.
  3. Melt chocolate in the microwave at 50% power for 1 minute. Stir and continue to microwave at 30 second intervals until the chocolate is completely melted.
  4. Drizzle chocolate over the cereal marshmallow mixture.
  5. Let chocolate harden for about 3 hours before breaking into chunks and serving.
  6. Store in an airtight container.
