Pumpkin has discovered the deliciousness that is a Starbucks Iced Snowman Cookie. One very, very cold snowy day we stopped at Starbucks to redeem a gift card for some cocoa and she saw the picture of the cookie on the board and promptly asked (with manners) for a cookie to go with her cocoa. And she’s so cute, so it’s hard to say no. She enjoyed her kid temperature cocoa and we shared the cookie. It was good!
So, when I told her I had volunteered to make a treat for her preschool class she said it had to be snowman cookies! I wasn’t about to buy the whole class a cookie from Starbucks, especially when I had all the ingredients to make snowman cookies on hand!
These cookies are so easy to put together, but they’ll impress everyone! They are just a simple shortbread cookie iced in chocolate!
Start with your favorite shortbread cookie recipe or use the one below. Roll them out and cut with your snowman cookie cutter (mine came in a box of 10 different Christmas cutters that I bought at Target several years ago). Once your cookies are baked and cooled it’s time to decorate!
Gather up your chocolate options! I used Ghirardelli white chocolate chips for the body and dark chocolate chips for the hat, eyes and buttons. And I had orange and blue Wilton Candy Melts leftover from another project that worked perfectly for the carrot nose and scarf. I highly recommend using a good quality chocolate for the majority of the cookie.
I started with the white chocolate and melted it at 50% power for 1 minute, then stirred and warmed it in 30 second intervals until melted. Once melted add a little bit of vegetable shortening (1/2 tsp per oz of chocolate) to smooth it out and give it a gloss when it firms up. I put my melted chocolate in a squeeze bottle and set to work outlining and filling the snowman heads and bodies. Then I moved on to my dark chocolate, repeating the same steps, but outlining and filling his hat and adding eyes and buttons. I also used a squeeze bottle for the scarves. For the noses I drew them on with a toothpick. And that was it!
The chocolate will firm back up and these cuties will be ready to share! Pumpkin loved sharing them with her classmates and her teachers were very impressed.
Of course she also enjoyed eating our Copycat Starbucks Iced Snowman Cookies! We still have a few left over and she’s already asked to make them again! The girls are now on winter break and cookie decorating is on our to do list, so we may just have to make more!!!
- 1 cup unsalted butter (room temperature)
- 3/4 cup powdered sugar
- 1 tbsp vanilla
- 2 cups flour
- 1 tsp baking powder
- Cream together butter and sugar in a large bowl using a hand or stand mixer. Add vanilla and mix well.
- Add flour and baking powder and mix just until combined.
- Remove dough from bowl, forming a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350 degrees F.
- On a floured surface roll out the dough to 1/4" thickness, cut with cookie cutter and transfer to a lined baking sheet.
- Bake for 8-10 minutes. Allow to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool.
- Decorate once completely cool.
