Cupcake loves granola and granola bars. I’ve been trying to get her to eat hot oatmeal, which I usually make with a squirt of honey and a handful of dried cherries, but she just won’t try it. She always sees the oats and knows that granola bars are made with them, so I’ve been making a lot of granola bars lately. This one is my new favorite!
- 4 tablespoons unsalted butter
- 1/2 cup packed light brown sugar
- 1/4 cup honey
- 2 cups quick oats
- 1 cup rice cereal
- 1/2 cup dried cherries
- 1/2 cup chopped pecans
- In a medium saucepan, combine the brown sugar with the honey and butter. Bring the mixture to a boil over medium-high heat, then lower the heat to medium-low and simmer until the sugar dissolves, about 2 minutes. Remove the saucepan from the heat.
- Add the oats, rice cereal, cherries and pecans to the saucepan and fold the ingredients to evenly coat with the sauce. Transfer the granola mixture to a 9-by-13-inch ungreased baking pan and press firmly to evenly fill. Let the granola mixture set until firm. Cut into bars.
These bars are sweet. Honey sweet. And chewy. I like my granola bars chewy. This recipe is a keeper!
