Today’s cookie is a hubby favorite! And it’s a bit unusual. What’s so unusual about Chocolate Peanut Butter Sandwich Cookies you ask? They’re made with crackers!!! Wait, so can I even call them a cookie? Who cares…..I’m calling them a cookie any way.
These are a super easy, 3 ingredient, no bake cookie. Want to make some? Here’s how.
Gather up your ingredients.
Yep, just these 3 ingredients!
Start slathering on your peanut butter. I like to put the peanut butter on all my crackers one sleeve at a time and lay them out on my parchment lined baking sheet. Then I bust out another sleeve and top them all.
Topping the crackers is a great job for little helpers. Unless your little helper has a cold and you don’t want her touching food with her germy little hands. Then just let her watch you make the sandwiches. Feel free to let your little helper eat the broken crackers if it keeps her from touching the good ones.
Now, my chocolate comes in this handy dandy melting tray, but the tray is not deep enough for my dipping, so I use a bowl. I microwaved my chocolate but feel free to use a double boiler if you prefer.
Now here is where a little technique comes in handy. I set my sandwich on top of the chocolate, then scoop it up with a fork. Then I take a big spoonful of chocolate and pour it over the sandwich, letting the excess drizzle over the sides. When it’s nice and coated I tap the fork on the side of the bowl to remove the excess and smooth out the top.
Then you want to slide your chocolate covered goodness off the fork back onto your parchment lined sheet. Then keep going with the rest of your sandwiches.
Warning: This part can get a bit messy with chocolate drips, so you may want to keep your bowl close to your sheet!
Once you are done dipping let the chocolate set at room temperature.
Once the chocolate has hardened, enjoy!!
The package of candy coating is enough to cover two sleeves of crackers, with some chocolate left to spare, so if you want to use the whole box of crackers you better pick up another package of candy coating. You could also use candy melts or chocolate chips thinned with a bit of vegetable oil. These are such a simple treat too make, but they are a whole lot of yum!

- Ritz Crackers
- Peanut Butter
- Chocolate Candy Coating
- Spread peanut butter on one side of a cracker. Place a second cracker on top to make a sandwich.
- Melt chocolate. Dip sandwich in melted chocolate to coat. Tap off excess.
- Place on a parchment lined baking sheet until chocolate firms.
