I have a quick and easy recipe for you today. If I can even call it a recipe. Cinnamon popcorn is our new favorite snack and you only need 3 ingredients to make it!
Cupcake has really been into popcorn lately, but sometimes you just need to dress it up a bit. The recipe on the side of the popping corn is full of sugar, which I’m trying to limit, so I reached for my favorite spice, cinnamon and my favorite oil, coconut, to add some flavor and the results were divine!
You get a bit of sweetness from the coconut oil, but it also helps the cinnamon coat the popcorn. But the cinnamon is the good stuff! This is a great snack for sharing while curled up on the couch watching a movie. Or you can hog it all yourself if you want.
- 1/2 cup popping corn
- 2 tbsp coconut oil
- 1 tbsp coconut oil, melted
- 1 tsp cinnamon
- Add popping corn and 2 tbsp coconut oil to a heavy bottom pot. Cover, leaving a space for steam to escape. Heat while corn pops, shaking the pan once or twice. When the popping slows down to 3-4 seconds remove from heat.
- Drizzle 1 tbsp melted coconut oil over popped corn and sprinkle with cinnamon. Stir to combine. Serve.
