Grilling season is upon us! Are you ready to fire up the grill and eat some delicious food? We’re taking advantage of the non-super-windy days and the rain free days to put our grill to work. First up was this delicious Marinated Grilled Chicken Breasts.
This marinade comes from pantry staples and is so good! This is perfect for one of those “Oh, no, what’s for dinner?” moments that happens midday. It’s also great for planning ahead, too, as you can put the chicken in the marinade, then toss it in the freezer to cook another day.
So grab a bowl and whisk together some balsamic vinegar, Dijon mustard, olive oil and your spices. It’s going to take on a strange color, but it will smell fantastic!
Pour it over the chicken breasts, get them nice and covered and let it do it’s thing.
Hubby is the handy grill man in our house and he grilled these up to perfection! So juicy. So flavorful! I tossed it on a bed of veggies, splashed a little balsamic on top and was a happy camper!
- 2 tbsp balsamic vinegar
- 2 tbsp dijon mustard
- 1/4 cup extra virgin olive oil
- 1 tsp oregano
- 1 tsp dried thyme
- salt and pepper to taste
- 4 chicken breasts
- Whisk together the vinegar, mustard, oil and seasonings. Cover the chicken breasts with the marinade and allow to sit, refrigerated for 4-6 hours. Fire up the grill and cook until the chicken is cooked through.
- You can also freeze the chicken after it has been marinated. Thaw before grilling.
