Hubby is a creature of habit.  He finds something he likes and sticks with it for the long haul.  Good for me, I suppose since he picked me for forever.  But I do get a teensy bit annoyed when he won’t try something new.  Take peanut butter for example.  It’s peanut butter everything.  Favorite candy? Reese’s Peanut Butter Cups.  Favorite creation from Cold Stone Creamery?  Peanut Butter Cup Perfection.  Favorite cheesecake from Cheesecake Factory?  Undecided at the moment since they did away with his beloved Peanut Butter Chocolate Chip Cookie Dough cheesecake.

So Cupcake wanted me to help her make a birthday cake for daddy’s birthday last week.  I had a bag of mini Reese’s Peanut Butter Cups in the pantry for a hubby preferred dessert (instead of my usual favorite, mint).  And the wheels started turning.  I started with a chocolate cake.  I mean Cupcake started with a chocolate cake.

Baking a cakeI chopped up the peanut butter cups and she sprinkled them into the pans that were full of cake batter before baking.  Since we had chocolate peanut butter cup cake there was only one frosting choice.  Peanut butter buttercream frosting.  Hubby isn’t a huge fan of sugary frosting, but luckily this peanut butter buttercream isn’t overly sweet.  It was the perfect topping (and filling) for our cake!  And it was pretty good straight off the spatula as well.

Peanut Butter Buttercream Frosting


  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 2 cups powdered sugar
  • 4 tbsp milk


  1. Cream butter and peanut butter in a bowl with an electric mixer until well combined. Gradually add powdered sugar and milk. Beat on high for 3 minutes until frosting is fluffy.

Everyone loved it!  We wanted to eat it for breakfast, lunch, dinner and dessert.  OK, someone might have had it for breakfast.

Whip up a cake and a batch of this frosting.  You’ll be happy you did.

  1. My husband usually gets some sort of fruit dessert, often involving strawberries for his birthday. But at least other times he is interested in trying new things. 🙂 He will pretty much eat whatever dessert I create, even if it’s one I intended for myself–ha!
