Are you ready for more peppermint treats? I am! All the Peppermint Dipped Oreos are gone, so it’s time for Peppermint Rice Krispie Treats!
Every year when the peppermint marshmallows come out I always grab a bag with the intention of making something with them, usually Rice Krispie Treats, but every year I end up eating them straight out of the bag or tossing them on some cocoa.
Gather up your ingredients. You need 4 cups of the peppermint marshmallows to melt so you’ll be left with a heaping cup.
Melt your marshmallows and 3 tbsp butter over low heat, stirring often. Remove from the heat and pour in 6 cups of Rice Krispies.
And add the remaining marshmallows (to get some super marshmallowy bites!) and give it all a stir. Press into a greased 9×13 pan. And if you’re feeling fancy melt a little chocolate and drizzle it over the Peppermint Rice Krispie Treats. I used Ghiradelli dark chocolate. Yum!
You guys, seriously these are amazing. I shared a few with the girls and delivered a few to a friend who just had a baby and then devoured the rest in no time flat!
But that doesn’t surprise you I’m sure because you know I love the peppermint chocolate combination (proof here and here and here and here)!!
And I was a smart girl this year because I bought two bags of marshmallows. Now, to make more Peppermint Rice Krispie Treats or just eat them straight out of the bag??????
- 10 oz peppermint marshmallows, divided
- 3 tbsp butter
- 6 cups Rice Krispies cereal
- chocolate (optional)
- In a large pot melt 4 cups of marshmallows and 3 tbsp of butter over low heat. Once melted, remove from heat and add in cereal and remaining marshmallows and stir until combined. Press mixture into a greased 9"x13" pan. Optional: Melt chocolate and drizzle over the treats. Allow to cool before cutting into squares.
