Oh, my goodness. I had the best weekend ever! For the first time since having babies I had a girls weekend away! Four of us loaded up and headed out of town to meet up with a friend of ours who moved away. It was so great to see her! We had lunch, we went shopping, we chatted, we tried not to talk about kids, we got all dolled up and had a fun night out. We stayed overnight and slept in!!! We can’t wait to do it again!
The only downside of the weekend was that I blew my calorie budget like whoa! on Saturday. Yeah, I’ve been counting calories. It’s been awesome and sucky at the same time. Awesome because I’m seeing some results already (well, I’ve also stepped up my workout game) and sucky because well, sometimes I’m hungry. It’s really given me a lot of perspective on portion control and has made me see where my diet is lacking.
I’ve discovered that I love kale, parsley, Granny Smith and banana mixed up in a smoothie. Taco salad can be just as delicious as taco in a tortilla. And nothing is off limits, but I feel much better mentally and physically when I just eat one cookie instead of six. Here’s hoping I can finally get back into my prepregnancy jeans (you know, since that baby is almost 18 months old) and stay there.

Sesame Chicken Nuggets are a family favorite. They’re not the most healthy way to prepare chicken, but everything in moderation! And I did swap out white wheat flour for the all purpose flour to make it just a tad healthier.
- 4 chicken breasts
- 2 eggs
- 1/2 cup water
- 2/3 cup flour
- 1/3 sesame seeds
- oil for pan frying
- Heat oil in a skillet over medium-high heat.
- Cut chicken into bite sized pieces.
- In a small bowl, mix the eggs with water.
- In a separate bowl combine the flour and eggs.
- Dip chicken pieces in the eggs, then roll in the flour mixture until coated. Cook chicken pieces in small batches in hot oil, flipping once until golden brown and cooked through. Remove to a paper towel lined plate.
I served them up with some baked sweet potato fries seasoned with my new favorite seasoning, smoked paprika. Yum!
