Mini M&M Cookies and Tips to Make Picture Perfect Cookies

Do you take pictures of your cookies?  No?  Just me?  But do you want picture perfect cookies?  You know, cookies that look so good on a platter no one at the holiday party will be able to resist?  Well, I’ve got two tips to help you out with that!

I know I promised you a sewing tutorial, but I still need pictures with my model.  How about something sweet instead?  No Bake Peanut Butter Bars perhaps?  Because who doesn’t love peanut butter and chocolate!!

No Bake Peanut Butter Bars #dessert #recipe #chocolate #peanutbutter #nobakeThis is one of those recipes I made a long time ago and lost track of.  I don’t remember where I originally found it, but I refound it the other day on Paula Deen’s website.  I needed something to take to a sorority meeting and I just happened to have all the necessary ingredients, so No Bake Peanut Butter Bars were the answer!

I sent the leftovers to work with hubby yesterday and I kind of regret that.  Only because I want to have one more.  I really didn’t need half the batch!  And I probably would have ate half the batch if they were left here!

No Bake Peanut Butter Bars

Ingredients

  • 1 cup butter, softened
  • 1 cup peanut butter
  • 3 cup confectioners’ sugar
  • 1 1/2 cup graham cracker crumbs
  • 1 1/2 cup semisweet chocolate chips

Instructions

  1. Line a 13 by 9 by 2-inch pan with parchment.
  2. Combine the butter, peanut butter, sugar, and graham cracker crumbs in a food processor. Process until well combined. Press into the lined pan using your hands.
  3. Melt the chocolate chips in the microwave for 1 minute on high (100%). Stir. If the chocolate has not completely melted, microwave for 10 seconds more, then stir. Spread evenly over the cookie layer with a spatula. Chill for several hours.
  4. When ready to serve, allow the candy to come to room temperature before cutting into pieces. Store in an airtight container in the refrigerator.

No Bake Peanut Butter Bars

Post-Run Chocolate Peanut Butter Smoothie

Who doesn’t love to celebrate the end of a great run with chocolate?  How about some delicious and good for you chocolate?  I love a post-run chocolate peanut butter smoothie.  It’s my go-to drink after a run. A little bit of protein, some good potassium and carbs make this chocolate peanut butter smoothie a good recovery snack.

You only need 3 ingredients for this smoothie, so it’s quick and easy!

Chocolate Peanut Butter Smoothie #recipeStart with frozen bananas.  I always keep frozen bananas in the fridge.  I use them for this smoothie and banana swirl.  Chop up a ripe banana or two and toss them into the freezer and you’ll have them ready when you need them.  Toss the frozen bananas into a blender.  I like this little personal blender when I’m just making one smoothie.  It’s so much easier to clean than the big blender!  And you can drink right from the container!

Add your PB2 and chocolate milk (I’m an almond milk drinker) and give it a whirl.

Chocolate Peanut Butter Smoothie #recipeIt’s also good if you don’t have a frozen banana on hand, just a room temperature one, but I really suggest trying the frozen!  So refreshing!  And full of good stuff to help you recover from your workout.

Post-Run Chocolate Peanut Butter Smoothie

Ingredients

  • 1-2 bananas, chopped and frozen
  • 2 tbsp PB2
  • 1 cup chocolate milk (I prefer almond)

Instructions

  1. Add frozen bananas, PB2 and chocolate milk to a blender and pulse until combined. Serve immediately.

No Bake Eclair Cake

I thought No Bake Eclair Cake was one of those desserts that everyone knew how to make.  I took it to a cook out this weekend and it turns out that not everyone has tried it before.  But it turns out it is a dessert that everyone loves (at least in my experience).  What is not to love about it?  Creamy filling, chocolate topping, no baking required!

I love that it comes together so quickly!  And it can be made the night before.  Actually it’s better that way!  It gives the graham crackers time to soften.  Soft graham crackers is where it’s at!  In this recipe anyway.

I know I’ve already shared a No Bake S’moreclair Cake with you, but strangely not everyone likes marshmallow.  Weird, right?  The vanilla flavor here is a little more universally appealing.  And it makes for a less sticky dessert, which momma likes when feeding it to kids age 4 and under.  Because, well, they  just can’t seem to keep the dessert from getting all over their face and hands and clothes.

No Bake Eclair Cake

Ingredients

  • 1 package graham crackers
  • 1 package vanilla instant pudding
  • 2 cups milk
  • 1 tub Cool Whip
  • 1 can chocolate frosting

Instructions

  1. Prepare vanilla instant pudding as directed on box.
  2. While pudding is firming up in the fridge line a 9x13 pan with an even layer of graham crackers.
  3. Fold thawed Cool Whip into pudding. Pour half of the pudding mixture over the layer of graham crackers.
  4. Lay a single layer of graham crackers over the pudding mixture.
  5. Spread the remaining pudding mixture over the layer of graham crackers.
  6. Lay a single layer of graham crackers over the pudding mixture.
  7. Microwave the can of chocolate frosting for 30 seconds and stir. Pour over the top layer of graham crackers and spread evenly.
  8. Refrigerate until serving. (it's best to let this sit for several hours before serving so the graham crackers soften)
